DIRECTIONS
  1. Mix chopped onion, garlic, tomato, ginger, and chile using a food processor.
  2. In a skillet, heat olive oil over medium heat. Add bay leaves and cook for half a minute. Add the onion mixture and cook for about 2 minutes (until the oil begins to separate from the mixture). Season with chili, turmeric, coriander, garam masala, and salt to taste. Stirring, cook for about 2 minutes.
  3. Stir water into the mixture to get the desired thick consistency. Bring the mixture to a boil. Add chickpeas. Reduce to medium and continue cooking for about 5 min. Use cilantro for garnish. Serve. Enjoy your authentic chana masala!
