  1. If using eggs, preheat the oven to 400° F (200° C/Gas mark 6).
  2. Heat olive oil in an ovenproof skillet over medium. Cook bell pepper and onion for 5 minutes, or until softened. Next, add oregano and potatoes. Season with salt and ground black pepper. Cook for 15 minutes, or until fork-tender. Add beef. Cook for 5 minutes, or until crispy.
  3. If using eggs, make 6 wells. Crack eggs into each. Season with salt and ground black pepper to taste. Bake in the preheated oven for 7 minutes, or until set. Serve and enjoy your Corned Beef Hash!
