  1. In a bowl, whisk together olive oil (2 tbsp), chopped cilantro, minced garlic, cumin, and red pepper. Add chicken. Toss to coat the chicken with the mixture. Refrigerate for 30 minutes. 
  2. Then, preheat the oven to 425° F (210° C/Gas mark 7). 
  3. Heat olive oil (2 tbsp) in an ovenproof skillet over medium-high heat. Season the chicken with salt and ground black pepper. Place the chicken on the skillet skin-side down. Add marinade. Cook for 6 minutes, or until golden. Flip. Cook for 2 minutes on the other side. 
  4. Transfer the skillet to the oven. Bake in the preheated oven for 10 minutes, or until cooked through. Enjoy your oven-baked chicken thighs!
