DIRECTIONS
  1. In a heavy skillet, melt the butter and add potatoes. 
  2. Combine  the sugar, cinnamon, nutmeg, and salt. Cover the potatoes with sugar and cinnamon mixture. Stir.
  3. Cover the skillet. Reduce heat to low. Stirring occasionally, cook for about one hour until the sweet potatoes are candied and the sauce turns dark.
  4. Just before serving, stir in the vanilla. Serve.
