DIRECTIONS
  1. Combine sugar and vinegar in a saucepan. Mix in apples, diced shallots, raisins, red pepper flakes, ginger, and finally drop an anise star.
  2. Bring to a boil over medium-high heat; lower the heat to medium-low and mix in salt, mustard, and minced garlic.
  3. Let simmer for about 40 minutes; occasionally stir and test whether the apples and other fruit are soft enough. When the mixture is evenly tender, remove from heat, and discard the ginger slices and anise.
  4. Spoon into a bowl and let cool to room temperature, then refrigerate. Season with salt and red pepper flakes before serving.
