DIRECTIONS
- Combine sugar and vinegar in a saucepan. Mix in apples, diced shallots, raisins, red pepper flakes, ginger, and finally drop an anise star.
- Bring to a boil over medium-high heat; lower the heat to medium-low and mix in salt, mustard, and minced garlic.
- Let simmer for about 40 minutes; occasionally stir and test whether the apples and other fruit are soft enough. When the mixture is evenly tender, remove from heat, and discard the ginger slices and anise.
- Spoon into a bowl and let cool to room temperature, then refrigerate. Season with salt and red pepper flakes before serving.
