DIRECTIONS
  1. With an electric mixer, beat cheese and vanilla extract until smooth. Gradually beat in sugar. The mixture should be thick. Transfer to a piping bag fitted with a star tip.
  2. Cut off the leaf-end of strawberries. Cut a 3/4-inch piece from the pointed ends. 
  3. Place strawberries on a work surface. Pipe a swirl of the cheese mixture on top. Top with the strawberry hats. Pipe a small ball of the cheese mixture on top. To make eyes, press chocolate chips into the swirl of the cheese mixture. Enjoy your healthy Strawberry Santas!
