  1. Heat a deep skillet over medium. Add vegetable oil. Add butter. Stir and cook until the butter melts. Add flour. Stir to combine. Whisking, cook for 3 minutes, or until smooth. 
  2. Whisking, gradually add milk. Stirring, bring the milk to a bubble. When the milk thickens, gradually add cheese (2 cups). 
  3. Season with cayenne pepper and nutmeg. Add the macaroni. Stir to coat. 
  4. Transfer the Mac and Cheese to a baking dish. Top with Cheddar (1 cup). Place the dish under a hot broiler. Allow the cheese to brown. Serve and enjoy your tasty Mac and Cheese!
