  1. Preheat the oven to 350° F (180° C/Gas mark 4). Prepare a casserole dish by greasing it.
  2. In a skillet, heat butter. Add diced onion. Cook for 1 minute until translucent. Add diced ham. Cook for 3 minutes until heated. Remove from heat. 
  3. Combine half-and-half and heavy cream in a microwave-safe bowl. Nuke until the mixture is no longer cold. Add all-purpose flour and ground pepper. Stir to combine. Add salt if desired. 
  4. Combine Monterey Jack and Cheddar. 
  5. Slice potatoes into very thin slices. Layer 1/3 of the potato in the prepared dish. Sprinkle 1/3 of the ham. Add 1/3 of the cheese mixture. Pour 1/3 of the heavy cream mixture. Repeat the process twice more. Cover with foil. 
  6. Bake in the preheated oven for 40 minutes. Remove the foil. Bake for 20 minutes, until bubbly. Serve and enjoy your cheesy Scalloped potatoes!
