DIRECTIONS
- Preheat the oven to 350° F (180° C/Gas mark 4). Prepare a casserole dish by greasing it.
- In a skillet, heat butter. Add diced onion. Cook for 1 minute until translucent. Add diced ham. Cook for 3 minutes until heated. Remove from heat.
- Combine half-and-half and heavy cream in a microwave-safe bowl. Nuke until the mixture is no longer cold. Add all-purpose flour and ground pepper. Stir to combine. Add salt if desired.
- Combine Monterey Jack and Cheddar.
- Slice potatoes into very thin slices. Layer 1/3 of the potato in the prepared dish. Sprinkle 1/3 of the ham. Add 1/3 of the cheese mixture. Pour 1/3 of the heavy cream mixture. Repeat the process twice more. Cover with foil.
- Bake in the preheated oven for 40 minutes. Remove the foil. Bake for 20 minutes, until bubbly. Serve and enjoy your cheesy Scalloped potatoes!
