DIRECTIONS
  1. Melt butter in a pot over medium. Cook onion for 5 minutes, or until soft. Add garlic. Cook for 1 minute, or until fragrant. Add flour, seasoning, and red pepper. Whisk. Cook for 1 minute. 
  2. Add tomato paste to the pot. Cook for 2 minutes, or until darkened. Add vegetable broth. Add tomatoes. Bring to a boil. Add tortellini. Next, lower the heat and allow to simmer for 10 minutes, or until tender.
  3. Add heavy cream and cheese. Stir. Add spinach. Allow it to wilt. Season with salt and ground black pepper. Before serving, garnish with basil. Enjoy your tomato Tortellini Soup!
