DIRECTIONS
- Melt butter in a pot over medium. Cook onion for 5 minutes, or until soft. Add garlic. Cook for 1 minute, or until fragrant. Add flour, seasoning, and red pepper. Whisk. Cook for 1 minute.
- Add tomato paste to the pot. Cook for 2 minutes, or until darkened. Add vegetable broth. Add tomatoes. Bring to a boil. Add tortellini. Next, lower the heat and allow to simmer for 10 minutes, or until tender.
- Add heavy cream and cheese. Stir. Add spinach. Allow it to wilt. Season with salt and ground black pepper. Before serving, garnish with basil. Enjoy your tomato Tortellini Soup!
