DIRECTIONS
  1. Preheat oven to 425° F (220° C/Gas mark 7). Prepare a baking sheet by lining it with aluminum foil. Spray with cooking spray.
  2. In a bowl, combine bread crumbs and cheese. Whisk eggs in a separate bowl.
  3. Dip zucchini into the egg mixture and roll in the cheese mixture to coat. Transfer to the baking sheet.
  4. Bake Zucchini Fries for 20 min, turning once, until crisp.
