This Peanut Butter Soup is super creamy, filling, delicious, and packed with rich full-bodied flavors!
INGREDIENTS

Extra crunchy peanut butter
2/3 cup
Chili powder
1/4 tsp
Brown rice, uncooked
1/2 cup
Olive oil
2 tbsps
Onions, chopped

Vegetable broth or stock
8 cups
Pepper
1/4 tsp
Large red bell peppers, chopped
2
Garlic, minced
4 cloves
Tomatoes, crushed, with liquid
1 (28-oz) can
DIRECTIONS
- In a stockpot, heat oil over medium-high. Add onions and bell peppers. Cook them until the vegetables turn tender. Add minced garlic when almost done. Add crushed tomatoes, vegetable broth, chili powder, and pepper. Reduce heat and simmer for half an hour. Add rice, stir, and simmer for 15 minutes, covered. Add peanut butter, stir, and serve.
