INGREDIENTS
Servings: 6
All-purpose flour
2 cups
Salt
¼ tsp
Baking powder
1 tbsp
Butter
1 cup, softened + 2 tbsps, melted
Sour cream
1 cup
White sugar
1 ½ cups
Eggs
2
Vanilla extract
1 tbsp
Brown sugar
½ cup
Pecans
1 cup, chopped
Ground cinnamon
1 tsp
DIRECTIONS
  1. Pre-heat oven to 350°F/180°C/Gas Mark 4.
  2. Use aluminum foil to line a 9x13 baking tray, then apply cooking spray.
  3. Mix flour with baking powder and salt, sift into a large bowl.
  4. Fluff softened butter in another large bowl; add sour cream and sugar, beat well. Add eggs, one by one, beat until incorporated. Mix in vanilla extract.
  5. Carefully fold the dry ingredients into the moist mixture until just incorporated.
  6. Transfer the batter into the baking pan.
  7. Mix brown sugar with cinnamon and chopped pecans. Add melted butter and stir to make crumble.
  8. Sprinkle the pecan topping over the batter. Bake for 30 minutes or until the cake passes the toothpick test.
  9. Remove from oven, let sit in the pan for 15 minutes, turn over onto a wire rack to cool.
