Moist, flavorful fall apple butter spice cake. Makes a perfect dinner dessert or coffee cake.

Brown sugar
1 cup, packed
Ground cinnamon

Ground nutmeg
½ tsp.
Pecans
½ cup, chopped
All-purpose flour

Baking powder
1 tsp.
Baking soda
1 tsp.
Salt

Butter
½ cup, room temperature
White sugar
1 cup
Apple butter
¾ cup
Vanilla extract
1 tsp.
Whole bran cereal
½ cup
Sour cream
1 cup
Eggs, room temperature

DIRECTIONS
- Preheat oven to 350°F/180°C/Gas Mark 4. Lightly grease a 9x13 baking pan.
- Make the topping: mix cinnamon and nutmeg with brown sugar and pecans.
- Make the batter: add flour, baking powder, and soda, plus salt to a large bowl. Whisk to aerate.
- Use an electric mixer to beat butter with sugar until light and fluffy. Beat in eggs, one by one, then beat in apple butter, bran cereal, and vanilla extract. Mix in sour cream and the dry mixture by adding small portions and alternating them.
- Pour ½ batter into the bottom of the greased pan. Sprinkle with ½ topping.
- Top with the remaining batter and topping.
- Bake for about 40 minutes or until a toothpick comes out clean from the center of the cake.
