These delicious halibut steaks are baked to perfection!
INGREDIENTS
Servings: 4
Olive oil
1 tsp
Zucchini
1 cup, diced
Onion
½ cup, minced
Garlic
1 clove, peeled and minced
Fresh tomato
2 cups, diced
Fresh basil
2 tbsp, chopped
Salt
¼ tsp
Black pepper
¼ tsp, ground
Halibut
4 (6 oz) steaks
Feta cheese
1/3 cup, crumbled
DIRECTIONS
- While preheating oven to 450 F/230 C/ Gas mark 8, lightly grease a shallow baking dish.
- Pour olive oil in a medium saucepan and heat over medium heat. Add zucchini, onion, and garlic. Cook for 5 minutes constantly stirring. Remove the saucepan from the heat and add tomatoes, basil, salt, and pepper.
- Put halibut steaks in the prepared baking dish in one layer. Spread zucchini mixture over each steak. Top with feta cheese.
- Put in the oven and bake for 15 minutes, or until the fish is easily flaked.
