INGREDIENTS
Servings: 10
All-purpose flour
1 ½ cups
Baking soda
1 tsp.
Baking powder
1 tsp.
Salt
½ tsp.
3 bananas, mashed
White sugar
¾ cup
1 egg, lightly beaten
Butter
1/3 cup
Packed brown sugar
1/3 cup
All-purpose flour
2 tbsp.
Ground cinnamon
1/8 tsp.
Butter
1 tbsp.
DIRECTIONS
  1. Heat the oven to 375° F/190° C/Gas Mark 5.
  2. Take 10 muffin cups, lightly grease them or line with muffin papers.
  3. Combine the first four ingredients (from flour to salt) in a large bowl.
  4. Beat together the next four ingredients (from bananas to butter) and stir the banana mixture into the flour mixture, then spoon the batter into the muffin cups.
  5. Combine the remaining ingredients in a small bowl and mix well until the mixture starts to resemble coarse cornmeal.
  6. Sprinkle the banana topping over muffins and bake for 18 to 20 minutes.
