A savory combination of banana, walnuts, and oats is just the thing for summer evenings!
INGREDIENTS

Shortening
1 cup
Packed brown sugar
1 cup
1 egg
Banana
½ cup, ripe, mashed
Vanilla extract
1 tsp.
All-purpose flour
1 cup
Baking soda
½ tsp.
Salt
1 tsp.
Ground cinnamon
1 tsp.
Ground cloves
¼ tsp.
Rolled oats
3 cups
Walnuts
½ cup, chopped
DIRECTIONS
- Heat the oven to 350° F/175° C/Gas Mark 4 and grease cookie sheets.
- Prepare a large bowl and combine shortening and sugar in it.
- Add egg, banana, and vanilla extract.
- In another bowl, combine the next five ingredients (from flour to cloves) and add this mixture to the banana mixture stirring well.
- Add rolled oats and walnuts, mix well, and drop the batter on the cookie sheets leaving some room for spreading.
- Bake for 8 to 10 minutes and let the cookies cool for 5 minutes.
- Transfer cookie to a wire rack and let them cool.
