INGREDIENTS
Servings: 11
Pearl barley
1 1/2 cups
Water
4 1/2 cups
Canola oil
1 tbsp.
Red onion, thinly sliced
1
Dried apricots, sliced
3/4 cup
Sliced almonds
1/2 cup
Chopped fresh parsley
2 tbsp.
Plain low-fat yogurt
1 cup
Honey
2 tablespoons
Lemon, juiced
1
Ground cinnamon
1/2 tsp.
Ground turmeric
1/2 tsp.
Salt
1/2 tsp.
Ground nutmeg
1 pinch
DIRECTIONS
  1. Rinse barley. Combine barley and water in a heavy saucepan. Bring to a boil over high heat. Cover, and reduce heat to low simmer. Simmer until water is absorbed, about 30 minutes. Cool to room temperature.
  2. In a skillet heat cooking oil over medium-high heat until hot. Add onion, and sauté until golden brown.
  3. In a serving dish, mix together barley, onion, apricots, almonds, and parsley.
  4. In a separate bowl, mix together yogurt, honey, lemon juice, cinnamon, turmeric, salt, and nutmeg. Pour over the barley mixture, and mix well to combine. Serve at room temperature.
