INGREDIENTS
Servings: 8
Vegetable broth
2 quarts
Barley
1 cup, uncooked
Carrots
2, large, chopped
Celery
2 stalks, chopped
Diced tomatoes
1 (14.5 oz.), with juice
Zucchini
1, chopped
Garbanzo beans
1 (15 oz.) can, drained
Onion
1, chopped
Bay leaves
3
Garlic powder
1 tsp.
White sugar
1 tsp.
Salt
1 tsp.
Ground black pepper
½ tsp.
Dried parsley
1 tsp.
Curry powder
1 tsp.
Paprika
1 tsp.
Worcestershire sauce
1 tsp.
DIRECTIONS
  1. Take a large pot and pour the broth in it. Add the next eight ingredients (from barley to bay leaves).
  2. Season with all the remaining ingredients (from garlic powder to Worcestershire sauce).
  3. Bring the mixture to a boil, cover, and simmer for about 1 hour 30 minutes.
  4. The soup will be very thick. If necessary, add more broth.
  5. Remove bay leaves and serve.
