INGREDIENTS
Servings: 8
Vegetable broth
2 quarts
Barley
1 cup, uncooked
Carrots
2, large, chopped
Celery
2 stalks, chopped
Diced tomatoes
1 (14.5 oz.), with juice
Zucchini
1, chopped
Garbanzo beans
1 (15 oz.) can, drained
Onion
1, chopped
Bay leaves
3
Garlic powder
1 tsp.
White sugar
1 tsp.
Salt
1 tsp.
Ground black pepper
½ tsp.
Dried parsley
1 tsp.
Curry powder
1 tsp.
Paprika
1 tsp.
Worcestershire sauce
1 tsp.
DIRECTIONS
- Take a large pot and pour the broth in it. Add the next eight ingredients (from barley to bay leaves).
- Season with all the remaining ingredients (from garlic powder to Worcestershire sauce).
- Bring the mixture to a boil, cover, and simmer for about 1 hour 30 minutes.
- The soup will be very thick. If necessary, add more broth.
- Remove bay leaves and serve.
