INGREDIENTS

Olive oil
3 tbsp.
Italian sausage links
3 lbs.
Red bell peppers
3, sliced
Green bell peppers
2, sliced
Red onions
2, large, sliced
Garlic
3 cloves, chopped
Beer
2 (12 fl.oz.) bottles
Tomato paste
1 (6 oz.) can
Fresh oregano
2 tbsp., chopped
Fresh cilantro
3 tbsp., chopped
Hot sauce
2 tbsp.
Salt
to taste
Pepper
to taste
DIRECTIONS
  1. Take a large heavy skillet, add oil, and heat it over a medium-high heat.
  2. Add sausage and cook until browned on all sides. Remove from the skillet and set aside.
  3. To deglaze the pan, add 1 bottle of beer and scrape all blackened pieces from its bottom.
  4. Put the next four ingredients (from red bell peppers to garlic) in the skillet, pour in the rest of the beer, and add tomato paste. Stir well.
  5. Add all the remaining ingredients (from oregano to pepper), cover with a lid, and cook until the peppers and onions become tender.
  6. Cut the sausages into bite-size pieces and add the slices to peppers.
  7. Cover again and cook until the sausage is tender enough.
