A hearty recipe for a big indoor or outdoor party!
INGREDIENTS

Olive oil
3 tbsp.
Italian sausage links
3 lbs.
Red bell peppers
3, sliced
Green bell peppers
2, sliced
Red onions
2, large, sliced
Garlic
3 cloves, chopped
Beer
2 (12 fl.oz.) bottles
Tomato paste
1 (6 oz.) can
Fresh oregano
2 tbsp., chopped
Fresh cilantro
3 tbsp., chopped
Hot sauce
2 tbsp.
Salt
to taste
Pepper
to taste
DIRECTIONS
- Take a large heavy skillet, add oil, and heat it over a medium-high heat.
- Add sausage and cook until browned on all sides. Remove from the skillet and set aside.
- To deglaze the pan, add 1 bottle of beer and scrape all blackened pieces from its bottom.
- Put the next four ingredients (from red bell peppers to garlic) in the skillet, pour in the rest of the beer, and add tomato paste. Stir well.
- Add all the remaining ingredients (from oregano to pepper), cover with a lid, and cook until the peppers and onions become tender.
- Cut the sausages into bite-size pieces and add the slices to peppers.
- Cover again and cook until the sausage is tender enough.
