INGREDIENTS

Milk
1 cup
1 egg
Butter
3 tbsp., melted
Vanilla extract
1 tsp.
All-purpose flour
2 cups
Rolled oats
1 cup
Dark brown sugar
1 cup
Baking powder
1 ½ tsp.
Baking soda
½ tsp.
Pumpkin pie spice
½ tsp.
Salt
½ tsp.
Fresh blackberries
1 ½ cups
Turbinado raw sugar
¼ cup
DIRECTIONS
  1. While preheating oven to 400° F/200° C/ Gas Mark 6, grease 12 muffin cups or line with paper muffin liners. Put the egg, milk, butter, and vanilla extract in a bowl and whisk.
  2. Mix the flour, oats, brown sugar, baking powder, baking soda, pumpkin pie spice, and salt in a bowl. Add the egg mixture and stir until combined. Fold in blackberries. Divide the batter into the muffin cups and sprinkle with the turbinado sugar.
  3. Bake the muffins in the preheated oven for about 20 minutes. The muffins are ready when a toothpick inserted into the center of a muffin comes out clean. Cool the muffins in the pans for 10 minutes, and then let them cool completely on a wire rack.
