Quick and amazingly delicious muffins!
INGREDIENTS

Milk
1 cup
1 egg
Butter
3 tbsp., melted
Vanilla extract
1 tsp.
All-purpose flour
2 cups
Rolled oats
1 cup
Dark brown sugar
1 cup
Baking powder
1 ½ tsp.
Baking soda
½ tsp.
Pumpkin pie spice
½ tsp.
Salt
½ tsp.
Fresh blackberries
1 ½ cups
Turbinado raw sugar
¼ cup
DIRECTIONS
- While preheating oven to 400° F/200° C/ Gas Mark 6, grease 12 muffin cups or line with paper muffin liners. Put the egg, milk, butter, and vanilla extract in a bowl and whisk.
- Mix the flour, oats, brown sugar, baking powder, baking soda, pumpkin pie spice, and salt in a bowl. Add the egg mixture and stir until combined. Fold in blackberries. Divide the batter into the muffin cups and sprinkle with the turbinado sugar.
- Bake the muffins in the preheated oven for about 20 minutes. The muffins are ready when a toothpick inserted into the center of a muffin comes out clean. Cool the muffins in the pans for 10 minutes, and then let them cool completely on a wire rack.
