Amazing recipe – our users' favorite way to cook cauliflower in cheese with super-healthy broccoli in casserole dish!
INGREDIENTS

Uncooked white rice
1/2 cup
Broccoli florets
10 ounces
Cauliflower florets
10 ounces
Butter
1/2 cup
1 onion, chopped
Processed cheese food, cubed
1 pound
1 (10.75 ounce) can condensed cream of chicken soup
Milk
5 3/8 fluid ounces
Crushed buttery round cracker
1 1/2 cups
DIRECTIONS
- Preheat oven to 350° F/175° C/Gas Mark 4.
- Add rice to a saucepan filled with 1 cup water in 1:2 proportion. Bring to boil, stir so that rice does not stick to the bottom of the pan, reduce heat, cover and simmer for 20 minutes. Drain and set aside.
- Simmer broccoli and cauliflower florets in water for 10 minutes, or until crunchy.
- Melt butter and sauté onion in a large saucepan. Add cauliflower, broccoli, and rice into the saucepan. Mix to coat the vegetables and rice, mix in the cheese, chicken soup and milk. Transfer the mixture to a 9x13 inch baking dish and sprinkle with the crackers.
- Bake in the preheated oven for 30 minutes.
