INGREDIENTS

Uncooked white rice
1/2 cup 
Broccoli florets
10 ounces 
Cauliflower florets
10 ounces 
Butter
1/2 cup 
1 onion, chopped
Processed cheese food, cubed
1 pound 
1 (10.75 ounce) can condensed cream of chicken soup
Milk
5 3/8 fluid ounces 
Crushed buttery round cracker
1 1/2 cups 
DIRECTIONS
  1. Preheat oven to 350° F/175° C/Gas Mark 4.
  2. Add rice to a saucepan filled with 1 cup water in 1:2 proportion. Bring to boil, stir so that rice does not stick to the bottom of the pan, reduce heat, cover and simmer for 20 minutes. Drain and set aside.
  3. Simmer broccoli and cauliflower florets in water for 10 minutes, or until crunchy.
  4. Melt butter and sauté onion in a large saucepan. Add cauliflower, broccoli, and rice into the saucepan. Mix to coat the vegetables and rice, mix in the cheese, chicken soup and milk. Transfer the mixture to a 9x13 inch baking dish and sprinkle with the crackers.
  5. Bake in the preheated oven for 30 minutes.
