Seared Halibut with Caper Sauce

INGREDIENTS
Servings: 4
Olive oil
1 tbsp.
Halibut
2 (8 oz.) steaks
White wine
½ cup
Garlic
1 tsp., chopped
Butter
¼ cup
Salt
to taste
Pepper
to taste
Capers
3 tbsp., with liquid
DIRECTIONS
  1. Add olive oil to a large skillet and heat it over a medium-high heat.
  2. Add halibut and fry them on both sides until they’re evenly brown. Remove from the pan and set aside.
  3. Add wine to the pan and scrape all the browned bits with a spatula.
  4. When the wine reduces significantly to almost nothing, add garlic, butter, and capers and season with salt and pepper.
  5. Let the sauce simmer for a minute, return steaks to the pan, and coat with the sauce.
  6. Cook until the fish is easily flaked with a fork. Serve with the sauce served over it.
