Pancakes with pumpkin and cinnamon are the ultimate holiday breakfast!

Brown sugar

Lemon juice
2 tbsps
Lemon zest
2 tsps, grated

Pumpkin puree
1 cup
Ground cinnamon
1 tsp
Ground ginger
1/2 tsp
Ground allspice
1/2 tsp
Egg

Milk
1 1/2 cups
White sugar
1 tbsp
Baking powder
2 tsps
DIRECTIONS
- Whisk together all-purpose flour, brown sugar, baking powder, white sugar, baking soda, and salt in a large bowl.
- Combine pumpkin puree, ground cinnamon, egg, milk, ground ginger, allspice, oil (2 tbsp), juice, and grated lemon zest in another bowl. Add the flour mixture. Stir just until moistened.
- Prepare a skillet by coating it with 1 tsp oil over medium heat.
- Pour 1/4 cupfuls of batter onto the skillet. Cook for 3 minutes on each side, until golden brown. Serve and enjoy your Pumpkin Pancakes!
