INGREDIENTS

All-purpose flour 
2 cups
Brown sugar 
2 tbsps
Baking soda 
1 tsp
Salt 
1/2 tsp
Vegetable oil 
2 tbsps
Lemon juice 
2 tbsps
Lemon zest 
2 tsps, grated
Vegetable oil 
1 tsp
Pumpkin puree 
1 cup
Ground cinnamon 
1 tsp
Ground ginger 
1/2 tsp
Ground allspice 
1/2 tsp
Egg 
1
Milk 
1 1/2 cups
White sugar 
1 tbsp
Baking powder 
2 tsps
DIRECTIONS
  1. Whisk together all-purpose flour, brown sugar, baking powder, white sugar,  baking soda, and salt in a large bowl. 
  2. Combine pumpkin puree, ground cinnamon, egg, milk, ground ginger, allspice, oil (2 tbsp), juice, and grated lemon zest in another bowl. Add the flour mixture. Stir just until moistened. 
  3. Prepare a skillet by coating it with 1 tsp oil over medium heat.
  4. Pour 1/4 cupfuls of batter onto the skillet. Cook for 3 minutes on each side, until golden brown. Serve and enjoy your Pumpkin Pancakes!
