INGREDIENTS

Broccoli
2 ½ cups, cooked, chopped
Chicken meat
2 cups, shredded, cooked
Mushrooms
2 (4.5 oz.) can, drained
Water chestnuts
1 (8 oz.) can, drained (optional)
Condensed cream of chicken soup
2 (10.75 oz.) cans
Mayonnaise
1 cup
Lemon juice
1 tsp.
Curry powder
1/4 tsp.
Butter
1 tbsp., melted
Cheddar cheese
½ cup, shredded
DIRECTIONS
  1. Heat the oven to 350° F/175° C/Gas Mark 4 and grease a 3-quart casserole dish.
  2. Put the cooked broccoli in the dish and arrange it evenly. Top broccoli with a layer of chicken, then add mushrooms and water chestnuts.
  3. Take a separate medium-sized bowl and mix all the remaining ingredients but cheese (from soup to butter) in it.
  4. Pour the soup mixture over vegetables and chicken and sprinkle with cheese.
  5. Bake the casserole for 30 to 45 minutes or until the cheese is golden brown and bubbly.
