Easy and award-winning Banana Bread recipe, for the moistest and fluffy banana cake ever. Yummy, so yummy!
INGREDIENTS

Margarine, softened
1/2 cup
Cream cheese, softened
1 (8 ounce) package
White sugar
1 1/4 cups
Eggs
2
Mashed overripe bananas
1 cup
Vanilla extract
1 tsp.
All-purpose flour
2 1/4 cups
Baking powder
1 1/2 tsp.
Baking soda
1/2 tsp.
Chopped pecans
3/4 cup
Brown sugar
2 tbsp.
Ground cinnamon
2 tsp.
DIRECTIONS
- Preheat oven to 350° F/175° C/Gas Mark 4. Grease and flour two 8x4-inch loaf pans.
- Beat together the margarine and cream cheese. Gradually sift the white sugar, and continue creaming until light and fluffy. Add eggs one at a time, beating well after each egg. Mix in mashed bananas and vanilla. Add flour, baking powder, and baking soda; mix until batter is just moist.
- In a small bowl, mix together chopped pecans, 2 tablespoons brown sugar, and cinnamon.
- Divide half the batter between the two prepared loaf pans. Sprinkle with pecan mixture over the batter in the pans, and top with remaining batter.
- Bake in the preheated oven until a toothpick inserted in the center of each loaf comes out dry, for about 45 minutes.
