Easy and rich strawberry crepes is a perfect idea for starting a new day with!
INGREDIENTS

Eggs
3
Milk
½ cup
Water
½ cup
Butter
3 tbsp., melted
All-purpose flour
¾ cup
Salt
½ tsp.
Cream cheese
1 (8 oz.) package, softened
Confectioners’ sugar
1 ¼ cups, sifted
Lemon juice
1 tbsp.
Lemon zest
1 tsp.
Vanilla extract
½ tsp.
Heavy cream
1 cup, whipped
Strawberries
4 cups, sliced
DIRECTIONS
- Put the first six ingredients (from eggs to salt) in a blender and blend until smooth.
- Use an electric mixer to blend the next five ingredients (from cream cheese to vanilla) until smooth. Fold in the whipped cream gently.
- Prepare a non-stick skillet or a griddle (oil it a bit) and heat it over a medium heat.
- Pour the batter on the pan (about 2 tbsp. for each crepe) and rotate it to help the batter spread as thinly as possible.
- When the batter is set and the edges of a crepe start to brown, flip it over and cook until the other side of the crepe starts to brown, too.
- Place the done crepes on a plate, cover them with a towel, and set aside.
- Before serving, fill every crepe with ¼ cup sliced strawberries and 1/3 cup of cream cheese, roll them up, and top with a dollop of the cheese and a bit of sliced berries.
