INGREDIENTS
Servings: 12
Eggs
3
Milk
½ cup
Water
½ cup
Butter
3 tbsp., melted
All-purpose flour
¾ cup
Salt
½ tsp.
Cream cheese
1 (8 oz.) package, softened
Confectioners’ sugar
1 ¼ cups, sifted
Lemon juice
1 tbsp.
Lemon zest
1 tsp.
Vanilla extract
½ tsp.
Heavy cream
1 cup, whipped
Strawberries
4 cups, sliced
DIRECTIONS
  1. Put the first six ingredients (from eggs to salt) in a blender and blend until smooth.
  2. Use an electric mixer to blend the next five ingredients (from cream cheese to vanilla) until smooth. Fold in the whipped cream gently.
  3. Prepare a non-stick skillet or a griddle (oil it a bit) and heat it over a medium heat.
  4. Pour the batter on the pan (about 2 tbsp. for each crepe) and rotate it to help the batter spread as thinly as possible.
  5. When the batter is set and the edges of a crepe start to brown, flip it over and cook until the other side of the crepe starts to brown, too.
  6. Place the done crepes on a plate, cover them with a towel, and set aside.
  7. Before serving, fill every crepe with ¼ cup sliced strawberries and 1/3 cup of cream cheese, roll them up, and top with a dollop of the cheese and a bit of sliced berries.
