Heavy cream 
2 1/2 cups
Brown sugar 
2 tbsps
Egg yolks 
White sugar, divided 
6 tbsps, divided
Vanilla extract 
1/2 tsp
  1. Preheat oven to 300° F (150° C).
  2. In a bowl, beat egg yolks, 4 tbsps white sugar, and vanilla until creamy.
  3. In a saucepan, stir cream over low heat until it's about to come to a boil. Remove from heat and stir into the egg and sugar mixture. Beat.  
  4. In the top pan of a boiler, stir the cream mixture over simmering water for 3 minutes. Remove from heat quickly. Pour the mixture into a heat-proof dish.
  5. Bake for 30 minutes. Remove the mixture from the oven. Let it cool to room temperature. Refrigerate for 1 hour or more. 
  6. Preheat the oven to broil. Combine 2 tbsps white sugar and brown sugar in a bowl. Sift over the custard. Place under the broiler for about 2 minutes. Remove from heat. Let it cool and refrigerate until set. Enjoy your Creme Brulee!
