This super healthy Crustless spinach quiche not only looks great, it really tastes of summer. Ideal for breakfast!
INGREDIENTS

Vegetable oil
1 tbsp.
Onion, chopped
1
Frozen chopped spinach, thawed and drained
1 (10 ounce) package
Eggs, beaten
5
Shredded Muenster cheese
3 cups
Salt
1/4 tsp.
Ground black pepper
1/8 tsp.
DIRECTIONS
- Preheat oven to 350° F/175° C/Gas Mark 4. Grease a 9-inch pie pan.
- In a large skillet, heat oil over medium-high heat. Add onions and fry, giving an occasional stir, until onions become soft. Add spinach and cook until excess moisture has evaporated.
- In a large bowl, mix eggs, cheese, salt and pepper. Add spinach mixture and stir until smooth. Scoop into prepared pie pan.
- Bake until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.
