This Curry Chicken is delicious, healthy, and packed with flavor!
INGREDIENTS
Servings: 6
Coconut milk
1 (14 oz) can
Tomatoes, stewed, diced
1 (14.5 oz) can
Tomato sauce
1 (8 oz) can
Boneless skinless chicken breasts
2 lbs, cut into 1/2-inch chunks
Salt and pepper
1 tsp
Vegetable oil
1 1/2 tbsps
Curry powder
2 tbsps
Onion
1/2 onion, thinly sliced
Garlic
2 cloves, crushed
Sugar
3 tbsps
DIRECTIONS
- Season the chicken with pepper and salt. In a large skillet over medium-high, heat oil and curry powder (2 min). Add onion and garlic. Cook 1 minute.
- Add chicken and toss until covered with oil. Reduce to medium and continue cooking for about 10 minutes (until the chicken is no longer pink in the center).
- Add coconut milk, tomato sauce, tomatoes, and sugar. Cover. Stirring, simmer about 30 minutes.
