INGREDIENTS
Servings: 6
Coconut milk 
 1 (14 oz) can
Tomatoes, stewed, diced
 1 (14.5 oz) can
Tomato sauce 
1 (8 oz) can
Boneless skinless chicken breasts 
 2 lbs, cut into 1/2-inch chunks
Salt and pepper 
1 tsp
Vegetable oil 
1 1/2 tbsps
Curry powder 
2 tbsps
Onion
1/2 onion, thinly sliced
Garlic 
2 cloves, crushed
Sugar 
3 tbsps
DIRECTIONS
  1. Season the chicken with pepper and salt. In a large skillet over medium-high, heat oil and curry powder (2 min). Add onion and garlic. Cook 1 minute. 
  2. Add chicken and toss until covered with oil. Reduce to medium and continue cooking for about 10 minutes (until the chicken is no longer pink in the center).
  3. Add coconut milk, tomato sauce, tomatoes, and sugar. Cover. Stirring, simmer about 30 minutes.
