INGREDIENTS
Servings: 8
Potatoes
2 lb.
Cumin seed
2 tbsps.
Olive oil
2 tbsps.
Ground turmeric
2 tsps.
Cayenne pepper
½ tsp.
Curry powder
2 tsps.
Kosher salt
2 tsps.
Ground black pepper
½ tsp.
Cilantro, chopped
3 tbsps.
DIRECTIONS
  1. Cut potatoes into ¼ inch thick pieces.
  2. Place potato pieces into a large saucepan. Pour water into the saucepan until the potato pieces are covered. Heat the water to its boiling point. After that, cook until the potato pieces are soft.
  3. Take a saute pan and heat olive oil in it. Place cumin seeds, ground turmeric, and curry powder into the saute pan and saute them for about 1 minute.
  4. Place potato pieces into the saute pan and saute them until they are toasted. Sprinkle with kosher salt, cayenne pepper, chopped cilantro, and black pepper.
