Easy, kid-friendly, flavorful dill pickle meatloaf recipe is a keeper!
INGREDIENTS

Egg

Small onion, diced

Dill pickle juice
½ cup
Salt

Freshly ground black pepper
¼ tsp.
Bread
1 slice, torn to bits
Lean ground beef
1 lb.
Dill pickles
¼ cup, chopped
Ketchup
¼ cup
Water
2 tbsp.
Brown sugar
1 tbsp.
Worcestershire sauce
½ tsp.
DIRECTIONS
- Preheat oven to 350°F/180°C/Gas Mark. Lightly grease a loaf pan.
- Beat egg with pickle juice. Mix in diced onion, season with salt and pepper. Add bread bits, mix until soggy. Mix in ground beef thoroughly until smooth. Form a loaf and place into the pan.
- In a bowl, combine chopped pickles with ketchup, water, Worcestershire sauce and sugar. Pour the mixture over the meatloaf.
- Bake for about an hour. Check readiness with a cooking thermometer (it should read 160°F or more) or slice carefully in the middle and see if the center is no longer pink.
