INGREDIENTS

Small onion, diced

Dill pickle juice
½ cup
Salt
¾ tsp.
Freshly ground black pepper
¼ tsp.
Bread
1 slice, torn to bits
Lean ground beef
1 lb.
Dill pickles
¼ cup, chopped
Ketchup
¼ cup
Water
2 tbsp.
Brown sugar
1 tbsp.
Worcestershire sauce
½ tsp.
DIRECTIONS
  1. Preheat oven to 350°F/180°C/Gas Mark. Lightly grease a loaf pan.
  2. Beat egg with pickle juice. Mix in diced onion, season with salt and pepper. Add bread bits, mix until soggy. Mix in ground beef thoroughly until smooth. Form a loaf and place into the pan.
  3. In a bowl, combine chopped pickles with ketchup, water, Worcestershire sauce and sugar. Pour the mixture over the meatloaf.
  4. Bake for about an hour. Check readiness with a cooking thermometer (it should read 160°F or more) or slice carefully in the middle and see if the center is no longer pink.
