INGREDIENTS
Servings: 12
All-purpose flour 
2 cups
Baking soda 
2 tsps
Ground cinnamon 
2 tsps
Salt 
1/4 tsp
White sugar 
1 1/4 cups
Eggs 
3
Vegetable oil 
1 cup
Vanilla extract 
2 tsps
Carrots 
2 cups, shredded
Raisins 
1/2 cup
Walnuts 
1/2 cup, chopped
Unsweetened flaked coconut 
1/2 cup
Apple
1, peeled, cored, and shredded
DIRECTIONS
  1. Preheat oven to 350° F (175° C). Prepare 12 muffin cups by greasing them. 
  2.  Mix all-purpose flour, ground cinnamon, white sugar, baking soda, and salt in a large bowl. Add shredded carrots, walnuts, flaked coconut, raisins, and shredded apple.
  3. Beat together eggs, vegetable oil, and vanilla extract. Combine the egg mixture and the carrot mixture. Stir. Scoop into muffin cups.
  4. Bake for 20 minutes. Use a toothpick to check for doneness: insert it into the center of a muffin and see if it comes out clean. Enjoy your Morning Glory Muffins!
