INGREDIENTS

Heavy cream 
1 pint 
Kiwi 
6, peeled and sliced 
Egg whites 
White sugar 
1 1/4 cups
Vanilla extract 
1 tsp
Lemon juice 
1 tsp
Cornstarch 
2 tsps
DIRECTIONS
  1. Preheat oven to 300° F (150° C). Prepare a baking sheet by lining it with parchment paper and draw a 9-inch circle on it. 
  2. Beat egg until stiff but NOT dry in a bowl. Slowly (1 tbsp at a time) add white sugar. Beat after each tablespoon. Beat the mixture until thick. Carefully fold in vanilla, juice, and cornstarch.
  3. Spoon the mixture inside the circle. Spread the mixture from the center toward the edge. Slightly build the edges. The center should be slightly depressed. 
  4. Bake the meringue for 1 hour. Cool on the wire rack.
  5. To make the filling: Beat cream until stiff peaks appear. Place the meringue on a serving plate. Fill the center with cream and top with fruit or berries. Serve and enjoy your Pavlova cake!
