Heavy cream
1 pint
Kiwi
6, peeled and sliced
Egg whites

White sugar
1 1/4 cups
Vanilla extract

Lemon juice

Cornstarch

DIRECTIONS
- Preheat oven to 300° F (150° C). Prepare a baking sheet by lining it with parchment paper and draw a 9-inch circle on it.
- Beat egg until stiff but NOT dry in a bowl. Slowly (1 tbsp at a time) add white sugar. Beat after each tablespoon. Beat the mixture until thick. Carefully fold in vanilla, juice, and cornstarch.
- Spoon the mixture inside the circle. Spread the mixture from the center toward the edge. Slightly build the edges. The center should be slightly depressed.
- Bake the meringue for 1 hour. Cool on the wire rack.
- To make the filling: Beat cream until stiff peaks appear. Place the meringue on a serving plate. Fill the center with cream and top with fruit or berries. Serve and enjoy your Pavlova cake!
