Only 3-ingredient, this meal is a win-win: easy to cook main dish. You can serve it with garnish of your choice: rice, baked potatoes or fries, or vegetable salad
Italian seasoned bread crumbs 2 cups
Olive oil 1/2 cup
Pork tenderloin 2 pounds
- Preheat oven to 425° F/ 220° C/Gas Mark 7.
- Combine bread crumbs and olive oil in a bowl. Mix to reach consistency moist enough to stick to the meat when pressed. Place pork on a shallow cooking sheet. Press the crumb mixture onto all sides of the meat until there is no pink showing, usually 1/4 inch thick.
- Bake for at least 35 minutes until a meat thermometer reads 165°F (75°C) or until there is no pink when the pork is cut. Allow the pork to rest for 10 minutes, then cut into 1/2 inch slices.
