INGREDIENTS
Servings: 4
Bread
8 slices
Eggs
8, large
Cooked bacon
2 slices, roughly chopped, for garnish
Scallions
2, sliced thinly
Salt
to taste
Pepper
to taste
DIRECTIONS
  1. Heat the oven to 400° F/200° C/Gas Mark 6.
  2. Spray a sheet pan with a cooking spray.
  3. With a biscuit cutter, cut the center of every bread slice.
  4. Put the toasts on a sheet pan and break the egg in the center. Put in the oven and cook for 8 to 10 minutes or until the eggs whites are set.
  5. Garnish the toasts with bacon and scallions and season the egg with salt and pepper. Serve.
