A nutritious vegan mixture of pasta, lentils, rice, and onion is a tasty dinner option!
INGREDIENTS

Brown lentils
¾ cup
Water
4 cups
Long grain rice
¾ cup, uncooked
Elbow macaroni
1 cup
Vegetable oil
2 tbsp.
2 onions, large, chopped
Garlic
4 cloves, minced
Diced tomatoes
1 (15.5 oz.) can
Red pepper flakes
¼ tsp., or to taste
Salt
to taste
Pepper
to taste
DIRECTIONS
- Add lentils and water to a large saucepan, bring it to a boil, and let it simmer over a medium heat for about 25 minutes.
- Add rice and simmer for 20 more minutes or until the rice becomes tender.
- Take another saucepan and fill with water. Season the water with salt a bit, bring it to a boil, add elbow macaroni, and cook for about 8 minutes or until tender, then drain.
- Meanwhile, add the oil to a large skillet and heat it over a medium heat.
- Put onion and garlic to the skillet and cook until onion becomes slightly brown.
- Add all the remaining ingredients (from tomatoes to pepper) and simmer for about 10 to 20 minutes over a medium heat.
- Combine lentils, rice, and macaroni in a large serving plate. Add tomato sauce and mix until well coated.
