INGREDIENTS
Servings: 4
Brown lentils
¾ cup
Water
4 cups
Long grain rice
¾ cup, uncooked
Elbow macaroni
1 cup
Vegetable oil
2 tbsp.
2 onions, large, chopped
Garlic
4 cloves, minced
Diced tomatoes
1 (15.5 oz.) can
Red pepper flakes
¼ tsp., or to taste
Salt
to taste
Pepper
to taste
DIRECTIONS
  1. Add lentils and water to a large saucepan, bring it to a boil, and let it simmer over a medium heat for about 25 minutes.
  2. Add rice and simmer for 20 more minutes or until the rice becomes tender.
  3. Take another saucepan and fill with water. Season the water with salt a bit, bring it to a boil, add elbow macaroni, and cook for about 8 minutes or until tender, then drain.
  4. Meanwhile, add the oil to a large skillet and heat it over a medium heat.
  5. Put onion and garlic to the skillet and cook until onion becomes slightly brown.
  6. Add all the remaining ingredients (from tomatoes to pepper) and simmer for about 10 to 20 minutes over a medium heat.
  7. Combine lentils, rice, and macaroni in a large serving plate. Add tomato sauce and mix until well coated.
