INGREDIENTS

Fava beans
1 can (15 oz)
Olive oil
1 ½ tbsp.
Yellow onion, chopped

Ripe tomato, diced

Ground cumin
1 tsp.
Fresh parsley
¼ cup, chopped
Fresh lemon juice
¼ cup
Salt
to taste
Pepper
to taste
Ground red pepper
to taste
DIRECTIONS
- Transfer beans (with the liquids) from the can to a saucepan placed over high heat. Bring to a boil.
- Add diced tomato and chopped onion, season with olive oil, parsley, lemon juice, cumin, both peppers, and salt. Mix well; bring to a boil again.
- Turn the heat down to medium, let simmer for 5 minutes. Transfer to a bowl, let cool to warm. Serve with grilled flatbreads.
