German Potato Pancakes are perfect for a savoury breakfast or lunch. They go superbly with a dollop of sour cream or cottage cheese!

Eggs

All-purpose flour
2 tbsp.
Baking powder
1/4 tsp.
Salt
1/2 tsp.
Pepper
1/4 tsp.
Potatoes, medium, peeled and shredded

Finely chopped onion
1/2 cup
Vegetable oil
1/4 cup
DIRECTIONS
- In a large bowl, beat together eggs, baking powder, salt, and pepper. Stir in flour and mix in shredded potatoes and finely chopped onion.
- In a large skillet, heat oil over medium heat. Working in batches, drop heaping tablespoonfuls of the potato mixture into the skillet and press to flatten. Cook about 3 minutes on each side, until golden browned and crisp. Drain on paper towels.
