INGREDIENTS
Servings: 4
Honey
3 tbsp.
Soy sauce
3 tbsp.
Balsamic vinegar
3 tbsp.
Grated fresh ginger root
1 tsp.
Garlic, crushed or to taste
1 clove
Olive oil
2 tsp.
4 (6 ounce) mahi-mahi fillets
Salt and pepper to taste
Vegetable oil
1 tsbp.
DIRECTIONS
- In a bowl, mix together honey, balsamic vinegar, soy sauce, garlic, ginger, and olive oil. Season fish fillets with salt and pepper, and put them into the bowl skin side down. Cover with a plastic wrap, and place in the fridge for 20 minutes to marinate. Take the fish out of the fridge at least 30 minutes prior to cooking, for it to reach the room temperature.
- Heat vegetable oil in a skillet over medium-high heat. Remove fish from the dish, and reserve marinade. Fry fish for about 5 minutes on one side, turn it and fry for about 5 minutes on the other side. Fish is ready when it flakes easily when poked with a fork. Remove fish to a serving platter and keep warm.
- Pour marinade into the skillet, and heat over medium heat, constantly stirring, until the liquid thickens to a glaze consistently. Spoon glaze over fish, and serve immediately
