INGREDIENTS
Servings: 4
Cauliflower 
1 lb
Medium potatoes 
2, peeled and cubed
Fresh cilantro 
1 tsp, chopped
Vegetable oil 
1 tbsp
Cumin seeds 
1 tsp
Garlic 
1 tsp, minced
Ginger paste 
1 tsp
Garam masala 
1/2 tsp
Salt 
to taste
Ground turmeric 
1/2 tsp
Paprika 
1/2 tsp
Ground cumin 
1 tsp
Coconut milk
1 can (13.5 fl oz) (optional) 
DIRECTIONS
  1. In a skillet, heat oil over medium heat. Add cumin, garlic, and ginger paste. Stir and cook for a minute. Add potatoes to the skillet and season with cumin, garam masala, turmeric, paprika, and salt. Stirring occasionally, cook for 5 minutes, covered. Add cauliflower and cilantro and reduce heat to low. Cook for 10 minutes (until potatoes are tender). Optional: to make it less dry, add coconut milk and cook for 8 min more.
