INGREDIENTS
Servings: 24
Butter
1 cup
Packed brown sugar
1 cup
White sugar
1 cup
4 eggs
Vanilla extract
2 tsp.
All-purpose flour -  1 ½ cups
Baking powder
1 tsp.
Salt
1 tsp.
Yam
2 cups, peeled, finely shredded
Confectioners’ sugar
1 cup
Butter
2 tbsp.
Milk
2 tbsp.
DIRECTIONS
  1. Heat the oven to 350° F/175° C/Gas Mark 4; prepare a 9x13 baking dish and grease it.
  2. Combine butter and brown and white sugar in a large bowl and cream together until smooth.
  3. Add eggs, beating them, one at a time, and add vanilla.
  4. In another bowl, combine flour, baking powder, and salt. Add the mixture to the batter and stir well.
  5. Add yam and then spread the batter in the baking dish.
  6. Bake for half an hour or until a toothpick inserted in the center comes out clean.
  7. In another bowl, mix all the remaining ingredients (from confectioners’ sugar to milk) and top the brownies with the mixture while they’re warm. Serve warm or hot.
