INGREDIENTS
Servings: 12
Sugar
3 cups
Butter
1 cup, softened
Vanilla extract
1 tsp.
Eggs

All-purpose flour
3 ½ cups
Baking soda
2 tsp.
Salt
¼ tsp.
Buttermilk
1 cup
Bananas
6, very ripe, mashed
DIRECTIONS
  1. Heat oven to 325° F/165° C/Gas Mark 3.
  2. Lightly grease a 9x13 inch baking dish.
  3. Combine sugar and butter in a large bowl and mix until light and fluffy.
  4. Add eggs, stirring, one at a time, beating well. Add vanilla and stir again.
  5. Prepare another large bowl and sift together flour, baking soda, and salt.
  6. Combine the two mixtures, add buttermilk (optionally), and stir to combine.
  7. Add bananas and stir to combine. Pour the batter into the baking dish.
  8. Bake for about 1 hour or until a toothpick inserted in the center comes out clean.
