Pasta: Hazelnut-Mushroom Pilaf
INGREDIENTS
Servings: 6
Butter
¼ cup
Long-grain rice
½ cup, uncooked
Orzo pasta
¼ cup, uncooked
Fresh mushrooms
½ cup, sliced
Onion
½ cup, chopped
Celery
¼ cup, minced
Chicken broth
2 cups
Fresh parsley
2 tbsps, chopped
Dried marjoram
¼ tsp
Ground black pepper
¼ tsp
Hazelnuts
½ cup, toasted and chopped
DIRECTIONS
1. Melt butter in a large skillet over medium-low heat. Add rice, onion, orzo pasta, mushrooms, and celery. Sauté, stirring constantly, for several minutes or until rice is golden brown.
2. Pour in chicken broth. Add the remaining ingredients. Bring to a boil over high heat. Reduce heat to low, cover and simmer for about 15 minutes. Before serving, let stand 10 minutes.
