These blueberry muffins with walnuts are as healthy as they are delicious!
INGREDIENTS

All-purpose flour
3/4 cup
Oat bran
1/4 cup
Quick-cooking oats
1/4 cup
Wheat germ
1/4 cup
Baking powder
1 tsp
Buttermilk
1 cup
Egg

Vegetable oil
1 tbsp
Vanilla extract
1 tsp
Baking soda
1 tsp
Salt
1/4 tsp
Blueberries
1 cup
Walnuts
1/2 cup, chopped
Banana
1, mashed
Whole wheat flour
3/4 cup
White sugar
3/4 cup
DIRECTIONS
- Preheat the oven to 350° F (175° C). Prepare a muffin pan by lining it with paper muffin cups.
- Combine all-purpose flour, wheat flour, oat bran, oats, white sugar, wheat germ, baking powder, soda, and salt. Stir in berries and nuts.
- Mix together banana, buttermilk, egg, vegetable oil, and vanilla extract in a separate bowl. Combine the wet mixture and the dry mixture just until blended. Spoon the mixture into muffin cups.
- Bake for 15 minutes (check for doneness by lightly touching the tops of the muffins. They should spring back if they're done). Serve and enjoy your Healthy Muffins!
