INGREDIENTS

Chicken thighs

Chicken drumsticks

4 cups, cold, to cover
Buttermilk
2 cups, cold
Egg
1, beaten
Chicken seasoning mix
1 tsp.
All-purpose flour
3 cups

2 tbsp.
Vegetable oil
2 quarts, for frying
DIRECTIONS
  1. Put chicken pieces (thighs and drumsticks) in a large bowl, cover them with water, season with salt, and mix well. Cover the chicken and leave it in a fridge for at least 8 hours. Thoroughly rinse chicken.
  2. Combine buttermilk, egg, and 1 tbsp. seasoning mix in a large bowl. Mix well.
  3. Place chicken thighs and drumsticks into the buttermilk mixture and keep it in the fridge for 30 minutes to 1 hour.
  4. Prepare a deep-fryer or a large saucepan, add oil, and heat it to 375° F/190° C/Gas Mark 5.
  5. Combine flour and 2 tbsp. chicken mix in a shallow bowl and mix well.
  6. Remove chicken from the buttermilk sauce, shake off the excess buttermilk, and press each piece into flour.
  7. Put chicken pieces in the hot oil gently, 3-4 pieces at a time, and fry for about 12 to 15 minutes per batch, or until golden brown.
  8. Place chicken thighs and drumsticks to a rack set over paper towels to get rid of excess oil.
