This vegetarian version of meatloaf is made with brown rice, lentils, tomatoes, and herbs.

INGREDIENTS
Servings: 6
Dry brown lentils 
3/4 cup
Uncooked brown rice 
1/2 cup
Wheat germ 
1/2 cup
Ketchup 
2 tbsps
Soy sauce 
1 tbsp
Mozzarella 
1/3 cup, shredded
Dry bread crumbs 
1 1/2 cups
Eggs 
2
Onion 
1, chopped
Dried thyme 
1 tsp
Crushed tomatoes 
1/3 cup
Hot sauce 
2 tsps
DIRECTIONS
  1. Preheat the oven to 325° F (165° C/Gas mark 3).
  2. Cook rice and lentils according to the package directions.
  3. Mash lentils. Add wheat, bread crumbs, dried thyme, crushed tomatoes, cooked rice, eggs, onion, ketchup, soy sauce, and mozzarella. Pour the mixture into a loaf pan. Cover. 
  4. Bake the Vegetarian Meatloaf for 1 hour in the preheated oven.
