INGREDIENTS

Skinless, boneless chicken breast halves 
2 lbs
Fresh cilantro 
1 tbsp, chopped

Fresh ginger root

Curry powder

Fresh lemon juice 
1 tbsp
Ground cumin 
1 tsp
Ground turmeric 
1 tsp
Ground coriander 
1 tsp
Cayenne pepper 
1 tsp
Water

Crushed tomatoes 
1 (15 oz) can
Plain yogurt 
1 cup
Water 
1/2 cup
DIRECTIONS
  1. Season chicken with 2 tbsps salt. In a large skillet, heat oil over high heat. Add chicken and cook until browned. Transfer to a plate. Set aside.
  2. Reduce heat to medium-high. Add onion, garlic, and ginger. Cook for 8 min, until onion is translucent. Add ground cumin, turmeric, curry powder, cilantro, cayenne, and 1 tbsp water. Stir for 1 minute. Add crushed tomatoes, plain yogurt, 1 tbsp cilantro, and 1 tsp salt.
  3. Add browned chicken. Add 1/2 cup water, stir well, and bring to a boil. Sprinkle the chicken with garam masala and 1 tbsp cilantro.
  4. Cover and simmer for 20 minutes (until chicken is no longer pink in the center). Sprinkle with lemon juice. Serve and enjoy your Chicken Curry!
