INGREDIENTS

Bone-in chicken breast halves
8, skinless
Olive oil
1 tbsp
Onions
2, peeled and quartered
Fresh ginger
1 tsp, chopped
Garlic
1 tsp, crushed
Whole cloves
4
Cardamom
4 pods
Cinnamon stick
1
Hot curry powder
1 tbsp
Tomato sauce
1 (15 oz) can
Coconut milk
1 (10 oz) can
Salt
to taste
Pepper
to taste
DIRECTIONS
- Season the chicken breast with salt and pepper.
- In a skillet, heat oil over medium-high heat. Add chicken and saute until browned. Remove the chicken from the skillet.
- Add onions to the skillet. Saute until translucent. Add chopped ginger and crushed garlic. Saute until fragrant. Add curry powder. Stir.
- Return the browned chicken to the skillet. Add tomato sauce, coconut milk, whole cloves, cardamom pods, and cinnamon. Season with salt. Stir.
- Reduce heat to low. Cook for about 20 min, until the chicken is tender. Enjoy your Chicken Curry!
